How Catering Works
by Chef Mike Flowers

If you've ever attended a luncheon, wedding reception, rehearsal dinner, or cocktail party, then you've experienced catering. Done well, catering can make a gathering memorable and glamorous. Done poorly, it can make an event quite memorable, but perhaps not in the way you had intended. In this edition of How Stuff Works, chef Mike Flowers will answer many of your questions about How Catering Works, including food preparation and presentation, per-person portions, unexpected guests, and rotating menus. You'll come away knowing what it takes to cater a fabulous event!

What is Catering?
By definition, catering is the act of providing food and services. Today, catering involves so many things -- most caterers will provide all sorts of things in addition to the food, including table and chair set-up, napkins and eating utensils, and complete clean up.

Catering Styles

Buffet set-up is the most common, as it allows guests
to mingle and eat at the same time.
Catering can be an exciting and lucrative business. After all of the planning and preparation, there’s nothing more exhilarating than watching guests marvel over your culinary creations. There are two styles of catered events:

The reception buffet is the most common, as it provides an informal atmosphere for mingling, and is ideal for weddings and cocktail parties. It allows your guests to choose what they want from the selections you have provided. It consists of hot and cold finger foods (meatballs, small sandwiches, vegetable tray), petit fours (dainty, neatly decorated cakes), mints, and punch.

The full-service, sit-down meal is more formal and ideal for rehearsal dinners, dinner parties, and formal wedding receptions. It can be served as a buffet or served by a wait staff, depending on the formality desired.
